I find it so important to take Sunday as a day to prepare for the rest of the week. I always make sure I prepare my fridge, my mind, and my body for the week! I go grocery shopping after I plan out my meals for the week so that no time is wasted trying to decide what to have for dinner or lunch. A huge tip I have is to make grain bowls! They are super nutritious, yummy, and keep well as a leftover for lunch the next day. Yesterday my dad and I made a variation of Kitchn’s Balsamic Quinoa Spinach Salad, we doubled up the recipe so we could have enough for lunch today! It was really yummy and easy. Another tip, if you know you are going to have a really busy week, pick only simple and easy recipes to make so that you can save time.

We just added in a can of black beans, 1 red bell pepper, and used mesclun lettuce instead of spinach.
