Quinoa Veggie Toss

I substituted some items from one of my favorite cookbooks The Help Yourself Cookbook for Kids: 60 Easy Plant-Based Recipes Kids Can Make to Stay Healthy and Save the Earth

I don’t like mint and parsley in this salad so I used chopped up basil from our little basil plant we keep by the window.

I didn’t have cucumber so I used red peppers, cherry tomatos and cannelini beans instead!

I used my new favorite tool! A cuisinart mini-blender to mix the garlic, black pepper, lemon juice and salt (from the recipes Quinoa Middle Earth)

YUM FACTOR: 4.5 YUMS

EASE OF PREP: Pretty simple since we had garlic cloves already peeled in the fridge and the beans were canned.

CHEAT: Mom cooked the quinoa for me.
